(Spicy grilled chicken breast with tossed mixed greens.)

(Fresh Salmon patty, mildly seasoned grilled and served on a bun with a salad.)

(A flat homemade Indian bread stuffed with choice of curry.)

ENTREES

Poultry
Jerk Chicken
(Islanders most favorite dish chicken marinated in homemade jerk sauce overnight then grilled on a
slow flame infused with the essence of pimento (hot & spicy!!)

Brown-stewed Chicken
(Pan fried then smothered in a rich brown gravy of onions, tomatoes and bell peppers.)
No-Bay Fried Chicken (no batter, please!)
(Seasoned with a special blend of herbs and spices then fried to give a golden crust.)
Barbecued Chicken
(No-bay style spice dry rubbed barbecued chicken grilled and smoked with mesquite and hickory
chips. (Sauce provided but not necessary)

Curried Chicken
(Chunks of tender chicken stewed down in a rich curry sauce with ginger, pimento & onions.)

(Small tender pieces of meat cooked down with, ginger and onions.)

(Tender pieces of oxtail slowly cooked down with pimento, ginger and onions.)
Barbecued Ribs
(No-bay style spice dry rubbed barbecued pork or beef ribs grilled and smoked with mesquite and hickory chips (Sauce provided but not necessary)

(Plump juicy shrimp smothered in a rich curry ginger sauce with onions.)

(Pan-fried then smothered with tomatoes and onions in brown gravy.)

(Deep fired and topped with a warm vinaigrette of onions, carrots & hot peppers.)

(Cooked Down in a rich coconut sauce with tomatoes, onions, thyme and hot peppers.)

(Whole snapper steamed in a ginger, scallion and butter sauce.)

(Grilled to perfection and glazed with a butter rum ginger sauce.)

(Salmon smothered in a rich coconut curry sauce with onions and tomatoes)

(Seasoned with a blend of Cajun & Caribbean spices then pan-blackened to sear in the juices.)

(Lightly battered and fried to perfection.)
