Jerk Chicken
(Islanders most favorite dish chicken marinated in homemade jerk sauce overnight then grilled on a
slow flame infused with the essence of pimento (hot & spicy!!)
Brown-stewed Chicken
(Pan fried then smothered in a rich brown gravy of onions, tomatoes and bell peppers.)
No-Bay Fried Chicken (no batter, please!)
(Seasoned with
a special blend of herbs and spices then fried to give a golden crust.)
Barbecued Chicken
(No-bay style spice dry rubbed barbecued
chicken grilled and smoked with mesquite and hickory
